Our Story

Baking has been a lifelong passion for Gabriel—a journey that began in her Nonna and Nonno’s cozy kitchen in Peoria, Illinois. As a young girl in a close-knit Italian family, she was surrounded by the warmth of tradition, the smell of fresh dough, and the love that only family recipes can bring. It was there that she first discovered the joy of baking, learning time-honored techniques passed down through generations.

Gabriel later refined her craft at ICC College of Culinary Arts, gaining hands-on experience in professional kitchens and beloved bakeshops across Peoria. Over the years, she developed not only her skills in the kitchen but also a deep appreciation for meaningful customer service and the dedication it takes to create desserts that are both crave-worthy and affordable.

Owning a bakery had always been Gabriel’s dream. Through faith, determination, and countless hours of hard work, that dream became reality. Together with her husband Jarod—who has lovingly spent many late nights packaging, labeling, and supporting her vision—Gabriel launched Knotty Swan Bakeshop. What began as a passion project has grown into a viral sensation, all by the grace of God.

At Knotty Swan, we’re known for our rich, buttery-soft cookies, indulgent flavor-packed bars, beautifully crafted cakes, and artisan sourdough breads. Every item is made with intention, care, and a touch of magic.
